Warming Golden Moong Dal Soup

1/4 cup olive oil
1/2 cup thinly sliced onion
6 garlic cloves, minced
2 tbsp ginger, minced (paste works too!)
2 small chili pepper (remove seeds, minced)
2 cups thinly sliced carrots
2 cups sweet potatoes (small cubes)
1 tsp sea salt
6 cups vegetable broth
1.5 cups full fat coconut milk
2 cups moong dal beans (lentils work too!)
4 tbsp coconut aminos (or sub 2 tbsp regular aminos/soy sauce)
2 tbsp curry powder
•Heat a large pot over medium heat
•Add oil and onion once hot, stir gently until mostly caramelized
•Add garlic, ginger, chili pepper and sauté for 3-4 minutes
•Add carrots, potatoes, salt and cook for 3 minutes
•Add vegetable broth and coconut milk, increase heat to medium-high. bringing to a low boil
•Add beans and stir, reduce heat to simmer
•Add coconut aminos and curry powder and stir
•Simmer soup 25 minutes
